Two platters sit above the everyday range because of what is on them. The Premium Nigiri runs eight varieties and is the one that carries unagi and Hokkaido scallop together. The Hotate is built around the scallop, with hamachi, ahi and salmon alongside it.
Ikura is on the Sunrise, which sits just under them at the same price as the Premium Nigiri.

For one or two platters, call the store the same day and ask what they can do. For anything larger, or for a set pickup time, order online in advance and choose your pickup date and time.
Ask. Some substitutions are straightforward and others are not, depending on what came in that day. Call the store you are ordering from and they will tell you what they can change.
Look for the No raw fish and Some cooked marks on the platters above. The California Roll Platter is entirely cooked crab, avocado and cucumber, and the Mixed Combo and Sushi Combo platters both include cooked items. Pairing one cooked platter with one raw platter covers most mixed groups.
